Vegan Almond Slices {with sneaky super power}

These Almond Slices are perfect for afternoon tea and are deceptively simple to make. I have even made them in the camper van. I like having a few vegan treats up my sleeve for my wonderful vegan friends, but don’t let this put you off making them. They are really delicious and I’ve made a note at the bottom of the post on how to un-vegan them if you must!

Cake, it’s not the healthiest of foods so I like to try to sneak nutrition into my baking every now and again to appease the guilt of all the refined sugars and saturated fats. My favourite ingredient to do this is ground flaxseed, and what a super hero it is! Ground flaxseed is a mega source of plant-based Omega 3 {the essential fatty acid mostly found in oily fish} and is also a source of iron and calcium. It works really well in this recipe alongside the ground almonds. They certainly don’t taste healthy at all! Ground flaxseed can be found in any health food store and is best kept in a sealed container in the fridge once opened. It can be stirred into porridge, pancake batters, curries or soups.

oven 170c {gas3}

line a 20cm square baking tin, or similar with baking parchment.

  • Short crust pastry; the ready made, ready rolled sort makes this very quick and simple.
  • Raspberry Jam
  • 40g Ground Almonds
  • 30g Ground Flaxseed
  • 30g Semolina (or just use another 30g Ground almonds)
  • 125g Golden Caster Sugar
  • 20g Allergycare Egg Replacer {or other of your choice, if so use for 1 egg and omit the water below}
  • A few drops of Almond Extract
  • 75g melted vegan marg, or oil
  • 55ml Cold Water
  • Flaked Almonds for decoration

Cut the pastry to fit the bottom of the baking tin and spread with a layer of jam.

Put all the other ingredients except the water and the flaked almonds into a bowl and mix together. Stir in the water then cover the jam and pastry with this mixture. Sprinkle over flaked almonds to decorate and bake in the oven for about 30 minutes until risen and golden.

Leave to cool in the tin and cut into slices when cold. Simple as that!

These were the non vegan slices, just a bit thicker but the taste the same These can be made with 1 egg and melted butter, omitting the water if you wanted, for a non vegan slice xxx
