Banana and Blackberry Spelt Pancakes

Ever since I’ve moved into the Thundertruck I’ve found myself inadvertently working on the evolution of the banana pancake!

It began with the simple banana scotch pancakes, a recipe I honed in Shetland.

My greedy need for a delicious breakfast had that recipe pimped with more banana, more eggs, baking powder: anything to make them fatter and more filling.

I finally (for now) think these are the best I’ve ever made, dare I say this?

The secret to this pancake success is the spelt flour, a flour I’ve only recently ‘discovered’.

We had spent a few days last week staying with friends in pretty Buckinghamshire; Haley has a dreamy collection of recipe books, and – swoon – a larder, where a packet of spelt flour was in amongst the baking ingredients.

Haley mentioned that she made spelt pancakes from a Nordic recipe book and they were the fluffiest pancakes she’s made.

Hmm, that got me thinking!

Banana spelt blackberry pancakesI don’t know if you’ve ever bought spelt flour, I hadn’t. The local supermarket sold Dove’s Farm organic spelt flour, and it says on the back of the packet that it rises quicker than wheat flour.

I am completely won over by this flour and I can’t wait to try baking more things with it.

For now it has replaced white wheat flour in my breakfast pancakes, it makes them so fluffy and more satisfying.

After moving back into the truck we ended up camping on a quiet farm campsite where there was a hedge overflowing with juicy blackberries.

I took a plate of these banana and blackberry spelt pancakes over to them and was told they were the “best blackberry pancakes I ever had!”.

Banana and Blackberry Spelt Pancakes

Use wild blackberries if you can, or sub with blueberries or frozen berries. Makes around 10 small pancakes.

  • 2 ripe bananas
  • 2 free-range eggs
  • 100 g (3/4 cup) wholemeal spelt flour
  • 1/2 tsp baking powder
  • 1/4 tsp ground cinnamon
  • a handful of wild blackberries
  • oil and butter to fry

Mash the bananas in a bowl then beat in the eggs.

Combine the spelt flour, baking powder and cinnamon then sift into the banana and egg mixture, beat well to a thick batter.

Heat 1/2 tablespoon of oil with a tiny knob of butter in a frying pan.

Heap spoonfuls of the batter into the hot pan then stud each with a few blackberries.

Fry the pancakes over a medium heat until browned underneath then flip over and continue frying until cooked through.

Repeat until all the batter is used up.

Serve the pancakes immediately with honey or syrup, and extra butter if you’re feeling decadent.
